Chinese Barbecued Pork

Ingredients
1 pound pork tenderloin
1/2 teaspoon monosodium glutamate
1/2 cup soy sauce
1/4 cup granulated sugar
1/2 teaspoon garlic powder
2 tablespoons catsup
1/4 teaspoon salt
Toasted sesame seeds
Hot mustard and soy sauce (optional)

Cooking Method

  1. In a mixing bowl, combine 1/2 teaspoon monosodium glutamate, 1/2 cup soy sauce, 1/4 cup granulated sugar, 1/2 teaspoon garlic powder, 2 tablespoons catsup and 1/4 teaspoon salt.
  2. Slice into 2 strips 1 pound pork tenderloin.
  3. Marinate pork for at least 3 hours in sauce, turning frequently. Drain pork and place on oven rack at 350 degrees for 40 minutes, turning every 10 minutes to assure even brownness.
  4. Slice into 1/4 inch thickness, and sprinkle with toasted sesame seeds. Hot mustard and soy sauce dip optional.

Chinese style barbecued pork is not only great for a snack, it is as versatile as cooked ham, but with better flavor. Cha Siew can be used for sandwiches, for garnishing Won Ton, and can be cooked with rice, among many other uses. So whenever you make Cha Siew, triple the above recipe, and keep it in reserve in your refrigerator. It will keep nicely for many days.
